Handvo with Foxtail millet & Spinach

Foxtail millet is one of the oldest of all the cultivated millets. These are good for heart, fights with diabetes, gluten free, high in antioxidants, prevents cancer…. It is high in dietary fiber, protein, and healthy micros. It offers rich grain support for brain health, nerve signals, hair health, memory and skin health. Need I go on about the benefits???Please google for full nutrients chart if you aren’t already convinced to start consuming more of this supergrain.Handvo is a traditional Gujarati vegetable savory cake, that usually uses a mix of dals , rice and bottle Gourd. Here is my quick and healthier version of it. I have kept the basic essence of the recipe, but used more of vegetables and no rice at all.


  1. Moong Dal 1/2 Cup
  2. Chana Dal 1/2 Cup
  3. Foxtail Millet 1 Cup
  4. Ginger 1 inch piece
  5. Garlic 4-5 cloves
  6. Green Chilies Medium Sized 3
  7. Curry Leaves 2 Sprigs
  8. Salt To Taste
  9. Curd 1/4 Cup
  10. Sesame Seeds
  11. Mustard Seeds 1 tsp
  12. Vegetable Oil 2 tsp
  13. Turmeric Powder 1/2 tsp
  14. Pinch of asafoetida
  15. Bottle Gourd about 150gms
  16. Spinach about 250gms
  17. Fruit Salt 1 sachet.


  1. In a bowl, take both dals and foxtail millet, wash a few times, soak together for three to four hours.
  2. Drain and add these into a mixer jar, along with ginger, garlic, green chilli, curd, curry leaves, salt, turmeric powder, and asafoetida. Grind it all into a paste-like consistency, just like dosa batter.
  3. To this batter add grated bottle gourd and chopped spinach. Also add about 2 teaspoons of sesame seeds and 1 tsp of oil. Give it a good mix. It might seem at this point of time that there is too much vegetables and not enough batter, but do not worry. Once it cooks , it does settle down.
  4. Add all of the contents of Eno fruit salt sachet to this mixture. Pour the batter into a greased, cake tin and sprinkle some sesame seeds on top for decoration before baking for 30-40 minutes on 180 degrees celsius. Make sure you get a nice golden crust.
  5. Take it out, allow it to cool, cut into pieces of your desired size. Season with mustard and curry leaves.
  6. Serve hot with some coriander-mint chutney.

Serve as a Breakfast, diet food or at snack- time. Either ways it is packed with protein, nutrients and veggies đŸ™‚
